🍳 Easy Red Chilaquiles Rojos (Serves 1–2)

🧺 Ingredients (from the kit):

🔥 Optional Add-Ons:

  • 1 egg (or tofu scramble for vegan)
  • Sliced red onion
  • ½ avocado, sliced or mashed
  • Fresh coriander (cilantro)
  • Crumbled cheese, vegan cheese, or feta
  • El Cielo – Natural Green Habanero Sauce (if you like it spicy!)
  • Lime wedge

👩🍳 Instructions:

  1. Heat the Beans
    In a small saucepan, warm 200–250g of refried beans over low heat until creamy and hot. Stir occasionally. Add a splash of water if needed to loosen the texture.

  2. Warm the Salsa
    In a non-stick pan, heat about ⅓ of the La Llorona Salsa jar (approx. 120ml) over medium heat for 2–3 minutes until simmering.

  3. Add Totopos
    Gently toss in one large handful (60–70g) of totopos. Coat them in the warm salsa and cook for 2–3 minutes, just until slightly softened but still crisp around the edges.

  4. Optional Egg or Tofu
    Fry an egg or tofu scramble in a separate pan while the chilaquiles are warming.

  5. Assemble Your Plate
    Spread a generous spoonful of refried beans on the base of a plate. Pile on your chilaquiles. Top with fried egg or tofu (if using).

  6. Garnish & Serve
    Add fresh avocado, sliced onion, coriander, and crumbled cheese. Drizzle with El Cielo Green Habanero Sauce and squeeze over a bit of lime for brightness.
