  1. Warm the Beans
    In a small saucepan, heat 200–250g of refried beans over low heat. Add a splash of water to loosen them up, if needed.

  2. Heat the Tortillas
    Warm 2 tortillas on a hot skillet for about 30 seconds per side or wrap in a clean towel and microwave for 20–30 seconds.

  3. Fry the Eggs
    In a lightly oiled pan, fry 2 eggs sunny-side up (or to your liking). Season with a pinch of salt.

  4. Plate the Tortillas
    Place one tortilla on each side of the plate. Spread a generous spoonful of refried beans on each tortilla.

  5. Top with Eggs & Salsa
    Carefully place one fried egg over each tortilla.

  6. Add Toppings & Serve
    Finish with avocado slices, a sprinkle of coriander, or cheese if desired. Add a drizzle of green habanero sauce for extra heat and a squeeze of lime for brightness.
