RECIPES

Sopes Cooking Instructions:

  • 2 cups corn flour yields approx. 8-9 sopes
  • Mix 2 cups of flour with approx 2 cups of warm water and mix for about 4 minutes by hand.
  • Divide masa into approx 8 small sized balls
  • Use a tortilla press (or 2 strong flat surfaces) covered with wax paper to flatten the masa balls slightly, leaving the thickness about 1.5-2cm thick
  • Peel sopes off the wax paper carefuly and place on a griddle (preheated to about 230°c), cook for 45-50 seconds, and flip if a few times to fully cook the sope (a few black marks is ok)
  • Remove from heat and place inside a folded cotton kitchen cloth to cool down for 2-4 minutes.
  • Using your fingers, pinch the edges of the sope to create a wall around the edge.
  • Cover the sopes to keep warm inside a folded cotton kitchen cloth until filling is ready.

Preapre the Refried Beans for the Sopes

  • Open the refried beans can and empty the contents in a saucepan with a tiny amount of water at the bottom.
  • Heat up the saucepan on medium heat stirring the beans constantly so the bottom doesnt get burnt.
  • While you stir, you can add some more flavour like powder chicken/veggie stock or our favourite powder ancho chilli
  • Once heated up, remove from heat.

Assemble the Sopes

  • Using a spoon, take some heated up refried beans and place them on the top of the already cooked sopes, using the spoon bottom to spread an even layer of beans.
  • The next layer should be any of your favourite toppings (suggestions below)
  • Add slices of avocado, sour cream and/or cheese crumbs
  • Add Jalapeno slices as garnish and spice (optional) or your favourite salsa!
  • Enjoy your homemade Sopes!
