Ingredients for Marinade:

 

Instructions for marinade:

Marinade time: 4 hours

  1. Add the softened chiles, garlic, oregano, chipotle peppers, achiote paste, onion, apple cider vinegar, cumin, and salt to a blender or food processor.
  2. Add some of the water used to soak the chiles and blend until smooth.
  3. Pour the marinade over 1 kg of chicken thighs or breasts and let marinate for at least 4 hours, preferably overnight.

Cooking the Chicken:

  1. Preheat your oven to 200°C with the broiler on.
  2. Line a baking sheet with foil. Remove the chicken from the marinade and place on the sheet.
  3. Cook until fully done and charred, either by baking, skewering and cooking upright, or grilling on a barbecue.
  4. Once the chicken is cooked through and charred, remove it from the heat and let it rest before slicing.

Pico de Gallo Ingredients:

  • 3 large tomatoes
  • 1/3 cup cilantro (coriander) leaves, roughly chopped
  • 1/4 cup finely chopped white onion
  • 1½ tbsp finely chopped jalapeño or serrano chili (adjust to taste)
  • 1–2 tbsp lime juice (adjust to taste)
  • ½ tsp salt

Instructions:

  1. Cut the tomatoes in half and scoop out the seeds and watery centers. Dice into 1 cm pieces.
  2. Combine the diced tomatoes, cilantro, onion, jalapeño, lime juice, and salt.
  3. Let sit for 5 to 20 minutes before serving. This can be made up to 1 day ahead; leave out the lime juice and salt until just before serving.

 

Taco Assembly:

  1. Start with a warm tortilla.
  2. Add slices of the juicy charred chicken.
  3. Top with Pico de Gallo.
  4. Finish with a drizzle of El Cielo Pineapple and Habanero Fiesta Sauce
