El Chielo Recipe

SERVES: 4

INGREDIENTS:

El Cielo Cooking Ingredients 

• ½ cup   Ki Gourmet - La Adelita Chipotle Chili Salsa 
• 1/3 Cup El Cielo - 3Chiles Red Salsa 
• 2 Tsp La Anita - Achiote Paste Condiment
• 1 Tsp El Cielo - Mexican Oregano Dried 
• Drops of El Cielo - Pineapple Fiesta Sauce

 Fresh Ingredients:

• 1 ½ kg boneless pork loin
• 1 small onion, chopped
• 1 small orange, juiced
• 2 large garlic clove

Pantry Ingredients:

• 1 Can pineapple chunks in juice
• 2 Tbsp apple cider vinegar
• 1 Tsp salt
• 1 Tsp ground cumin
• 1 Cup chicken or vegetable broth
• 10 Corn tortillas
• Olive oil to spray the tortillas

Toppings:

• Fresh cilantro
• El Cielo - Pineapple Fiesta Sauce
• Lime wedges

COOKING INSTRUCTIONS

1. Shredded the Pork
2. Add onion, garlic, orange juice, vinegar, salt, achiote, cumin, oregano and  broth to the blender and blend it all for 2 minutes or until smooth.
3. Place pork loin in a large bowl and add the marinate with the chipotle chilli pepper sauce and the 3 chiles red salsa mix everything, cover, and refrigerate for at least 30 mins.
4. Place the marinated pork in a pressure cooker.
5. And cook for 2 hours, or until the pork fall-apart tender.
6. Remove the pork and let cool for 15 minutes. until cool enough to handle. Shred the meat by hand or with a fork and place in a bowl.

Tostadas

1. Preheat oven to 200 c degrees
2. Spray the tortillas with olive oil.
3. Lay out the tortillas on two cookie sheets, and place them in the oven for 8 mins or until crisp.
4. Spoon the pork meat on the tostadas. Top with the tortillas pineapple, cilantro, lime juice and with our delicious Pineapple fiesta chilli sauce
