Chilaquiles (pronounced chee-luh-key-lays) are a traditional Mexican breakfast made with tortilla chips simmered in sauce. Some say it is the best thing to eat after a night out! Typically, they’re made with salsa verde or red sauce that wields chilaquiles rojos. Our pack will get you the essential ingredients you require to make this dish - if you feel adventurous you can even turn them into your own homemade refried beans.

Making chilaquiles

  • Pour the Ki Gourmet over the corn chips in pan.
  • Simmer the mixture until the corn chips start softening.
  • You can garnish it with some raw onion rings and avocado slices, served as a main or as a side with scrambled eggs.
  • If it is served as a main it is a delicious gluten free, vegan, authentic and just plainly yummy meal.
  • The buttery El Cielo Bayo Beans are served as a side dish - just drain them, add a few spices and a dash of olive oil, stir through and voila!
  • Optionally you could add pulled chicken into the mix.
  • You can garnish it with crumbled queso fresco (crumbled green feta or Persian feta is a good alternative). 
  • Chilaquiles can be served with refried beans, eggs (scrambled or fried), beef and guacamole as side dishes.
